Ingrediënten
voor de boterkoek:
- 175 gram boter
- 200 gram bloem
- 125 gram basterdsuiker
- eventueel 1 zakje vanillesuiker
- snufje zout
boterkoekvorm doorsnee 20 cm
voor de lemon curd:
- 125 gram suiker
- 40 gram boter
- rasp van 1 citroen
- 2 eieren
- eventueel slagroom
Doe alle ingrediënten in een kom. Snijd de boter (met twee messen) in kleine blokjes en kneed alles met een koele hand door elkaar tot een gelijkmatig deeg. Druk het deeg uit in de boterkoekvorm.
Plaats de vorm op het rooster midden in de oven. Bak het ongeveer 20 à 25 minuten op circa 200-220°C. Laat de koek niet helemaal afbakken.
Druk het deeg met een bolle lepel wat in, zodat de lemond curd er niet af loopt.
Lemon curd
Doe suiker, boter en citroenrasp in een pan en laat het smelten. Voeg de twee losgeklopte eieren toe en blijf op een zacht vuurtje goed roeren tot mayonaisedikte.
Giet de curd op de boterkoek en bak de taart in 10 minuten af.
Versier de taart eventueel met toefjes slagroom.
